We’re always asked what we make for our big Christmas meal. There’s a tradition at Christmas called the Feast of the Seven Fishes when Catholics refrain from eating meat and dairy products. Well, one out of two ain’t bad! One year Mom took crabmeat, lobster and shrimp and made a lasagna with our Vodka sauce. As you might imagine, this was a BIG hit that first Christmas Eve. Now we enjoy this decadent dish much more often than just once a year and we think you will too!

Ingredients

- 2 jars Bove’s Vodka Sauce
- ½ lb. lump crab meat
- 2 Tbs. olive oil
- ¾ lb. Ricotta cheese
- 2 Tbs. chopped fresh Italian parsley
- ½ lb. cooked shrimp
- ¾ lb. lasagna noodles
- 1/3 lb. thinly sliced (or shredded) mozzarella cheese
- ½ lb. grated Parmesan cheese
- Salt and pepper to taste
Preheat: Preheat oven to 350°.
Prep: Cook shrimp, drain, and then combine with drained crabmeat. Set aside. Add noodles to boiling water along with 2 Tbs. of olive oil and 1 tsp. salt. Cook until barely al dente (do not overcook). Drain and separate noodles. Spread thin layer of Bove’s Vodka Sauce in bottom of lightly greased rectangular baking dish. Cover with layer of noodles followed by a layer of shrimp and crab mixture then a layer of the three cheeses. Continue alternating layers, ending with one last layer of noodles. Top with sauce and sprinkle with Parmesan cheese.
Bake: Bake 30-40 min. until bubbly and lightly browned.
Serve: Let stand 5 min. Sprinkle with chopped parsley. Cut and serve.
