Dick’s Traditional Red Clam Sauce

No one in our big Italian family drinks wine, beer, or liquor. Notice we didn’t say anything about eating it though! We love the sweetness that the wine lends to this dish.

Ingredients

1 jar Bove’s Roasted Garlic Sauce
 
1 tsp. red pepper
 
½ cup red wine (Chianti or your choice)
 
½ tsp. black pepper
 
¾ cup baby clams
 
1 Tbs. butter or olive oil
 
1 tsp. finely chopped fresh garlic

Cook: In a medium saucepan heat Bove’s Roasted Garlic Sauce for 10 minutes over low heat. In a small skillet, boil red wine for 30 seconds to 1 minute over high heat. When alcohol is burned off add clams, garlic, butter or olive oil, and both kinds of peppers. Simmer ingredients for 5-10 minutes, then gradually add to saucepan containing Bove’s Roasted Garlic Sauce. Begin a long simmer over low heat (for at least 40 minutes) to combine flavors.

Serve: Prepare spaghetti or linguini according to package directions, drain, and ladle simmered sauce over pasta.
